Here is a recipe for Finnish pancakes. They are SO good. I am partly Finnish btw.

Whip 3 eggs with 1/2 a cup of sugar. Add 2 cups milk and a dash of salt. Add flour, starting with 1/2 cup a little at a time. You will need more than 1/2 cup of flour but start with that. They are supposed to be quite thin so you don't need that much flour.
Of course, then just fry them up.

Best with cottage cheese in the centre and cooked strawberries on top. If you try them tell me what you think.

We call this Chow in Trinidad. We eat it as a snack it is a favourite of people of all ages. You can use almost any fruit to make this but I'll use mangoes in my example.

Mango Chow
2 half ripe mangoes
1-1/2 hot fresh pepper\
1 clove of garlic
1 tsp salt
4-6 leaves of chadon beni (cilantro)

Method:
1. Peel mangoes and cut into bite sized pieces placed in a bowl.
2. Chop pepper, garlic and chadon beni finely and add to bowl.
3. Add salt and mix thoroughly.
4. Taste and adjust as desired.

Note: Serves two but if you like it as much as me then its all yours.
Some other fruits you can make chow with are guavas, pineapple, portugals,

Try it and enjoy and tell me how it goes.
